Jill Brack
Chef & Culinary
Biography
A film and entertainment industry executive turned real estate developer, Jill Brack rarely spent time in the kitchen. That changed in 2004 when she and her daughter Stella were both diagnosed with celiac disease, an autoimmune disorder in which the intestines become damaged by eating gluten. Jill began baking allergy friendly treats that they both could enjoy and discovered her passion for creating gluten free goodies.
Determined to make gluten free food delicious, Brack went to work experimenting in the kitchen. She spent a year reworking family recipes and creating new ones, finally cooking up a secret formula that replaced traditional wheat flour with bean flour. When she started giving her cookies to friends and family they asked for more – even those who weren’t restricted to a gluten free diet. Realizing she was on to something extraordinary, Glow Gluten Free debuted in 2008 to rave reviews.
Baked in a dedicated gluten free kitchen, Glow Gluten Free Chocolate Chip, Gingersnap, Double Chocolate and Snickerdoodle cookies are a delicious all natural gluten free treat. The brand is popular with both conventional and gluten free cookie connoisseurs and has been singled out in Real Simple and New York Magazine as well as highlighted on Martha Stewart Sirius Radio and popular daytime talk and lifestyle shows.
In May 2010, Glow Gluten Free partnered with United Natural Foods (UNFI), the leading national distributor of natural, organic and specialty foods in the United States. Glow Gluten Free cookies are currently sold at specialty, gourmet and health food stores as well as select Whole Food Markets.
Jill Brack is a graduate of The American University in Washington DC and The Institute of Integrative Nutrition.
