For the first time in Festival history we’re bringing together two skilled Pizzaiolos to toss the dough together and craft the perfect late-night pizza party. Pizza After Dark teams Pulino’s Executive Chef Tony Liu with former Top Chef contestant Spike Mendelsohn to demonstrate their creativity in baking the classic Italian flatbread. Located on the corner of Bowery and Houston, Pulino’s Bar & Ristorante is a lively Italian trattoria that captures the bustling spirit of its New York neighborhood by serving pizza, antipasti, insalate and al forno dishes straight from the wood-burning oven. Tony Liu is a seasoned veteran of the food scene, having worked in numerous award-winning restaurants including Morandi, where he still serves as Executive Chef. As a three-time People’s Choice Winner at the annual New York and South Beach Burger Bash’s, Spike is known for his outrageous costumes and ability to really connect with the audience. Together Spike and Tony will be serving up savory and sweet pies made with Balthazar Bakery’s “mother” dough and cooked in a wood-burning oven – an artisanal approach that results in a crisp, yet chewy crust. The unexpected is perfectly expected so don’t be surprised to see pizza dough flying high in the air, original pizza creations and an open kitchen view with a DJ. Anything goes! From meats to veggies, spices to herbs, it’s time to pass the Parmesan and get to eating.
